peanut butter and banana stuffed french toast

my brother got a tattoo today! it’s a bridge, and it’s on his RIBCAGE. where all the nerve endings are. owwwwww. i’m not sure exactly what the significance of it is, but it’s from the video game ‘shadow of the colossus’ and it looks fuckin BOMB.

the tattoo artist’s main instructions were to eat a big meal in preparation (“that’s what i always do and it helps”). then again, there’s not much that a big meal can’t solve. this elevated french toast is composed of thick challah slices, generous schmears of peanut butter, tons of bananas, and a drizzle of honey. the soak is flavored with vanilla, nutmeg, and rum. are you in???

ingredients

  • 4 thick slices of challah or other bread
  • 1/4 cup peanut butter, approximately
  • 1 banana, sliced
  • honey
  • 2 eggs
  • 2 tbsp heavy cream
  • 1/2 tsp vanilla
  • 1/2 tsp nutmeg
  • 1/2 tbsp dark rum
  • 1/4 tsp salt
  • powdered sugar and maple syrup, for serving

spread each slice of bread with about a tablespoon of peanut butter (or more). top two of the slices with the bananas, then drizzle with honey. stack the slices together to form two sandwiches. whisk together the eggs, cream, vanilla, nutmeg, rum, and salt in a shallow bowl. preheat an electric griddle to 375º, or heat a large skillet over medium-high heat. grease with butter or cooking spray. soak all sides of the sandwiches in the egg mixture, then place on the griddle or skillet. cook 3-4 minutes on each side, or until golden brown. remove to a cutting board and halve diagonally. serve with sifted powdered sugar and warm syrup.
