microwave pumpkin oatmeal

makes one serving of oatmeal

I probably have this for breakfast 5 out of 7 days of the week. I’m addicted. Since I wake up at 6, I sometimes prep it the night before and then just microwave it in the morning. I can wake up comforted by the fact that I’ll soon be eating oatmeal that tastes like pumpkin pie!

 Ingredients

•1/2 cup old fashioned oats

•2 tbsp almond (or other) milk

•2 tbsp canned pumpkin

•1 tbsp brown sugar

•pinch pumpkin pie spice (if you don’t have it, a pinch of cinnamon, nutmeg, cloves, and/or allspice is fine)

•splash of vanilla extract

•sliced banana or whatever fresh fruit you have on hand (optional)

Stir together all ingredients except fresh fruit in a bowl and microwave for 1 minute. Stir again and top with fruit.
